Perfect Baked Cast Iron Skillet Eggs Recipe

Breakfast is considered by many to be the cornerstone of the day; it helps numerous individuals start their day right, and for some, it is the most peaceful meal of the day. Breakfast dishes tend to consist of some of the most well-known and comforting flavors. That is why there are restaurants with 24-hour breakfast menus. This recipe is one of those perfect dishes you might just be having for breakfast at midnight. 

Cooking Eggs in a Skillet

There are many ways to make eggs, poached, scrambled, beaten into french toast, or fried; if you have never considered baking an egg, well, now is your chance. Baked eggs are a breakfast experience that will impress any foodie. 

While most cast iron skillets are safe to use in the oven and on the stovetop, make sure yours hasn’t got plastic and is clean. There are a few considerations when you opt for baking or cooking eggs in a skillet. 

Make sure your skillet is seasoned well before use, and use the right amount of butter to keep the baked eggs from sticking to the sides of the skillet. Make sure that you preheat your oven to the correct temperature; your eggs need to be thoroughly cooked.

Baked Eggs in a Cast Iron Skillet

Baked eggs are simple, easy, and delicious. You can make this delicious dish in 30 minutes or less. The whole family will love this dish and can enjoy it with their own favorite toppings. If your cast iron skillet has a tight-fitting lid, you can make this dish outdoors while camping too. 

Ingredients:

  • 2 – 4 large eggs – opt for two eggs per person
  • 1 tablespoon butter
  • 1/2 cup potato cut into small cubes
  • 1/2 an onion, thinly sliced
  • 1/2 cup bell pepper, red and finely sliced
  • 1/2 cup heavy cream
  • 1/3 cup bacon bits
  • 1 teaspoon salt, Himalayan or sea salt
  • Salt and pepper to taste 
  • 2 tablespoons chives, freshly chopped
  • Optional to serve: Grated parmesan cheese, sour cream, cheddar cheese

Method:

Preheat the oven to 350 degrees Fahrenheit. 

Over medium-high heat, melt the butter, try not to burn it in the skillet. Fry the bacon bits in the butter until they are crispy, remove the bacon from the skillet and set aside. 

Add the onions and potato cubes to the skillet. Saute the veg until the onions are translucent and the potatoes are golden brown. Add the bell pepper and stir to combine. Add the fried bacon and combine it with the other cooked ingredients. Remove the skillet from heat. Pour the heavy cream into the mixture, stir to combine. 

Top with the shredded cheese. Make small wells in the food for the eggs. Crack the eggs individually in a small bowl and remove any shells. Slowly pour the eggs into the wells. Season the top of the dish with salt and pepper. 

Place the skillet into the oven and bake for 10 – 15 minutes. You should cook the eggs thoroughly. Remove the baked eggs from the oven and top with a sprinkle of chopped green onions and parmesan cheese. 

Serve immediately with other delicious breakfast delights such as a grilled tomato and fresh basil leaves. Breakfast always pairs well with a hot cup of coffee too!

Plain and Simply Stirred Eggs

Whether you enjoy a little more flavor in your meals or something a little simpler, this recipe for simple baked eggs is delicious and sophisticated. 

Ingredients:

  • 2 teaspoons of salted butter
  • 4 eggs 
  • Salt and black pepper to taste

Method: 

Preheat your oven to 325 degrees Fahrenheit. Carefully heat the skillet in the oven, melt the butter in the skillet, try not to burn the butter. Slowly crack the eggs into the skillet. Try not to break the egg yolks. 

Sprinkle the eggs with salt and pepper. Bake the eggs in the oven for 12 minutes. Remove from the oven and top with freshly chopped chives and a side of sour cream. 

Tip: Drizzle heavy cream into the eggs and gently stir. Try not to break the yolk.

Tip: if you think you could burn the butter, a great way to melt it, gently warm the skillet up, remove it from the oven before it gets too hot, and allow the butter to melt before adding the other ingredients. 

Endless Additions

This breakfast favorite is easily adaptable to any flavor; add your own twist with different kinds of vegetables, spices, and herbs. The secret is not to skimp on the ingredients. This dish is as rich or as decadent as you like or as plain and straightforward. Here are some of our favorites:

  • Spinach. Baby spinach is an ultimate winner choice when it comes to a dish with eggs, however, chopped regular spinach will do the trick too. Sizzle the leaves a bit and enjoy this addition to your cast iron skillet eggs.
  • Cheese. This is a perfect addition to your eggs – not only will it enhance the taste of the dish, but the cheese will also better the consistency of it all. Even though you can put almost any type of cheese, make sure that it is somewhat room temperature and not freezing cold just out of the fridge.
  • Sun-dried tomatoes. Whether you prefer a salty palate or you are just trying to minimize the amount of added salt in your dishes, sun-dried tomatoes are a great choice. Being quite salty by themselves, these will add just the right amount of flavor to this dish.
  • Herbs. Experiments are endless when it comes to herbs. Sage, parsley, dried oregano, dill… You name it! Try out adding different kinds of spices every time to find the most appealing one for your tastebuds.

Meat. If you are a true meat-lover, good news – you can add some of it to your skillet eggs too. Even though the recipe originally mentions bacon bits, feel free to experiment with different meat.
